Ginger Mash Sweet Potatoes



So easy...

Ingredients:
2 big sweet potatoes (preferably the yellow japanese variety)
1 stick unsalted butter
fresh ginger root (or that old one in your fridge)


1. roast potatoes at 400ยบ for 35 minutes, remove and let cool
2. mash with garlic and water in a food processor
3. add warmed (not melted) butter and mash again.
